Costco or Sam's rotisserie chickens

You just can't beat these things for prepping. Huge, already cooked at about the same price as an uncooked chicken.

I buy them 4 at a time and vacuum seal the whole chickens and freeze them. I use the entire chicken. The carcass makes a great chicken stock, I mean absolutely killer umami tasting stock. I add a few baby carrots and an onion, some herbs, and garlic and boil it for 2-3 hours. Use a strainer to strain out all the stuff and store in the freezer for months.

The skin, I like crisp up. So whether that's just putting it in the air fryer for 5-7 minutes or spreading it on top of a chicken/rice casserole, it's delicious. In the very least, throw it in with the bones for stock.

Of course the meat, you get enough you can divide that into 2 portions and use for soups or salads or casserole dishes.

The only complaint some might have is that they're too salty. I just don't use any salt in the cooking process as the chicken's already got it for me. Salt at the end, to taste, if necessary.
