I am facing a predicament with my irons. Any feedback is much appreciated!

I bought myself a new set of clubs about 2 months ago and have officially marked it the start of my ‘serious golf journey’. I want to do everything I can to improve my game and make the most out of my time playing. I’ve been practicing quite a bit lately, and am able to drive about 250 (IF, and when I hit a nice shot - I just need to provide some numbers for reference). Regarding my irons, I find myself the most consistent with my 7 currently. I don’t know how to explain it really, but seeing the angle of the club against the ball just makes sense in my mind - this continues the higher the club. I begin to lose this with my 6 and 5. At the moment, I can hit a 7 a clean 165-175 yards - the problem lies here. My 5 is going the same distance on most shots (I can get it nearly 200 on a great shot). This is really bugging me as I want to maintain consistent, meaningful distances with each club. Are there any notable tips for the longer irons?

Also, when hitting an iron, what is the general rule of thumb regarding divots? Do I always want to be taking some precious land with each strike? I notice that a lot of the time, I struggle to make a dent in the grass, but still seem to hit it okay. I can’t seem to get it down pat though, I either chunk it half way to bedrock or as I stated, don’t take much at all.

*Edit: I should’ve taken into account that I was hitting farther up than the actual tee off mats at the range. I’m fairly certain the distance markers wouldn’t account for this so I had to remove overall yardage to be fair.
