Apple Crumble Brioche Rolls

Yet another loopy whisk success - Apple crumble brioche rolls. These were so ridiculously soft and the combination & ratio of filling & topping is divine. Definitely using this dough for other bun flavors. Her nutella one is tempting but i’m currently on the hunt for cinnamon rolls that are properly shapeable without being dry. This dough could definitely be a contender, although as a little heads up - it’s not so sweet as it is in the recipe. You could probably add more sugar if preferred.

I still haven’t received my (huge) order of ingredients, so i had to switch out the millet flour to white teff flour. I recommend sticking to her suggestions if possible, but I find this is the best option (apart from brown rice) in such small batches. You can’t really notice it but the millet flour would probably make it slightly more fluffy and light. In bigger batches (as i did in the white bread) id recommend mixing the teff with white rice if you’re substituting the millet. This lightens it up a bit and has worked well for me.

Since i bake refined sugar free, i used coconut sugar instead of caster/brown sugar in all places (haven’t found a reasonable monk fruit sweetener yet). Coconut sugar is quite a lot darker in flavor (&appearance) but it worked so well in these. They aren’t very sweet at all (apart from the filling thanks to the apples) but i personally like them like this.

My apples were quite large so i didn’t add the entire batch on my rolls. Id say leave the very end of the short sides empty in order to be able to roll it neatly. I made the apple pieces quite small & cooked soft, which is just what i find most appetizing. Another note is to cool your apple filling properly before you spread it on since otherwise it melts the dough (somehow).

I also halved the recipe since i am in a testing phase at the moment, which its a little risky but if you’re precise enough it works fine. You just have to be a bit more aware of textures/baking time etc.

This is just my first attempt afterall, so have to say a great recipe that i will make again & iterate! Let me know if you try it or have any thoughts!
