Slowly ending a dating situation

I realize the RIGHT answer to ending a relationship is to cut it off and move on but I just CAN'T. It's my own issue. I'm in therapy for it.

So what's the next best thing? I enjoy this man and he's seeing other people as well (I was but stopped because it felt overwhelming) so it's nothing exclusive.

I've tried to break it off twice already. The first time turned into a conversation and things continued.

The second time is heading the same direction. He's coming over for more conversation.

My intent is to take sex off the table and try to maintain a friendship for a while and let that fizzle out because, frankly, he's a man and will gravitate to where the sex is.

I'm just having a hard time letting go and I'm not capable of going cold turkey. I'm working on this in therapy.

What advice do you have for me? Please be gentle. I'm struggling.
