Good/Cost Effective Meals for 1
Self-explanatory post title.
I've cooked for myself for the last few years, and have fallen into the trap of needing to work through perishable ingredients like meats and therefore eating the same thing for dinner several days in a row. Cue boredom and probably also being an awful chef for any potential visitors.
I also struggle with having fixation foods so for example have eaten potato cheese and beans for about 3 weeks straight because it's easy and cosy
I've started making pesto pasta with chorizo and veg, but wanted to know other meals you guys make that consist of dry foods, or foods with relatively long use by dates, or just foodstuffs that could be used a whole bunch of different ways (think boil em, mash em, stick em in a stew)
