RX6800XT paired with R9 7900x?

Building my first PC, want to pair RX6800XT (already bought) with R9 7900x (also considered R7 9700x however most people say the 9700x is only better for gaming due to less cores and being more recent.) I do video editing (no 4k footage, only 1080p or 2k) for a living and have 3 monitors at 1440p 144hz. The PC will be used 80% Productivity (AE, PP, PS, Blender, C4D.) and 20% Gaming (Fortnite, OV2, Marvel Rivals, ARK, heavy modded Minecraft). going with 64GB DDR5 Ram.

Currently my setup runs off an Acer Helios 300 2019 with i7 9750H and GTX 1660ti laptop. Buddy getting too old.

I dont want any Incompatibility or Bottlenecking issues, and as I mentioned earlier this is my first PC build, i dont know much about PCs. so any tips/advice/criticism or part recommendations for RAM, MOBO, COOLING and FANS etc would be appreciated.

budget is about $1500 CAD, after GPU and CPU $1000 Cad is already spent. But i am willing to push the budget a few hundred if really necessary, dont want to cheap out with trash.
