Can you just buy everything?

So far i seem to be able to buy anything i need in order to train a skill (except armor and weapons) does this continue all the way? Why train alchemy of i can buy al the potions when i level up combat anyway? Why train any collecting profession if i can buy everything to train any profession that creates stuff?
