I keep trying to learn but it breaks

I keep trying to learn blender, I have a list with the shortcuts and seen a ton of videos of how to use the tools and all but when I try to make something to practice my models break

I get overlapping faces Too many vertecies and my computer freezes The shape deforms and I can't go back

And because of this I haven't even been able to reach the point of rendering, material painting, animations and so on

Everytime I look at a new video I find something out that none of the other tutorials went through about the settings or blender set up or addons they had that I don't have and won't have cause I don't even know how to put addons

I keep trying to learn but the more I look the deeper and more complex the rabbit hole goes and I end up back at square one with a new blender update and figuring out how to prevent my model from breaking again

How did you do it? How do you manage to navigate blender and not get tangled up and confused?
