Inexpensive but favorite restaurants?

My husband and I will be in town for about 5 weeks, and I'd love to try some budget friendly restaurants that y'all love! We are staying in Vestavia, would prefer to get out of this area a bit. EDIT: Wow you guys are amazing, thanks for all the great recommendations!!
